We will be transiting Hong Kong on our way to Australia and allowing for getting out of customs and leaving our luggage, and then checking in for our next flight we will have 4 hrs to get into town and back again. If we take the airport express to HK Island do we have enough time to go up the peak and have lunch ( we are landing about 11am). If so, any recommendations for where to eat there? We will be returning in a few weeks for a longer stay so we arent too worried about not seeing a lot, just want to get out of the airport. Thanks in advance.

Possible, but I think a little rushed. Probably at least an hour to get there from the airport. Also, if the weather is like it is today, then you would see nothing at all on the Peak. Very very cloudy. If you do go to the Peak - then there are several choices such as the Peak Lookout.
I think perhaps better just catching the train to HK station and then looking to eat in Exchange Square. There are also places to eat above Kowloon Station - which would be a slightly faster journey and cheaper fare.
4 hours in town
You%26#39;d have plenty of time to take the Airport Express to its terminus at Hong Kong Station (24 mins). The station is connected to IFC Mall above and on Podium Level 4 of the mall is a roof garden with restaurants overlooking the harbour.
