Any tours need to be pre-booked? (Hong Kong, Xi'an, Beijing)

Hello all,

Going to Hong Kong, Xi%26#39;an, and Beijing in June. Do any sort of tours of the cities%26#39; must-do%26#39;s require a pre-booked tour?

I ask because I recently returned from South Africa, and wasn%26#39;t able to go on a Robben Island tour (THE thing to do in Cape Town) because we hadn%26#39;t pre-booked months in advance.

Any help is great help!
