Have a look at this site. It is a train timetable which I think would be quicker than bus. and you can get a sleeper which is a comfortable way to travel in China.

Taking by train k297 (19:08--08:48) from Guangzhou to Xiamen (850km)is the best way.

Better way? For me flying would definitely be a better way but that depends on your travel style and budget....
